Breakfast is indeed an important meal that can kickstart your day with energy and focus. Whether you prefer a hearty breakfast with sausage, eggs, and biscuits, a quick protein bar on-the-go, or a bowl of oatmeal or cereal, it's essential to fuel your body in the morning.


Preparing a breakfast casserole recipe the night before is a fantastic idea for those who are pressed for time in the mornings but still want a delicious and satisfying meal. Breakfast casseroles are versatile and can be made with a variety of ingredients like eggs, cheese, vegetables, and meats. They are not only convenient but also great for feeding a crowd if you have guests or family to serve.


Pairing the breakfast casserole with salsa adds a flavorful twist and can enhance the overall taste of the dish. Salsa can provide a fresh and tangy contrast to the richness of the casserole, making it a delightful combination.

Breakfast Casserole Recipe:

Ingredients:

*12 Large Eggs

*2/3 Cup( 160 ml) Milk or half-and-half

*1 Pound Breakfast Sausage, (either pork or turkey sausage), cooked and crumbled

*1 Cup (100g or 3.5oz) Shredded Cheddar Cheese

*3/4 Cup (100g) chopped yellow onion (1/2 of a large onion)

*2 Cups (275g or 9-10oz) chopped Bell peppers

*1 Cup (100g or 3oz) sliced mushrooms

*1 Cup roughly chopped fresh spinach

*2 Garlic Cloves, minced

*4 Cups (175g or 6oz) of crusty Bread, cubed (Crusty sourdough is fantastic in this recipe)

*1 tsp Olive Oil

1 tsp Dried Rosemary or Italian seasoning, optional

*Salt and Pepper to taste (1/4 tsp salt and 1/8 tsp freshly ground black pepper)

*Optional garnish: green onion and/or chopped parsley

*Salsa for serving


Instructions:

  1. Grease a 9x13-inch or any 3-4 quart oven-safe dish. Arrange bread cubes in an even layer in bottom of pan.

  2. Heat olive oil in a large skillet over medium heat. Add sausage and rosemary/Italian seasoning, if using, and break up the sausage into bite-size pieces with a wooden spoon or rubber spatula as it begins to cook. Add the onion, garlic, peppers, mushrooms, and spinach and cook until everything has slightly softened and sausage is mostly cooked through, about 5-6 minutes.

  3. Remove sausage and vegetable mixture from heat and spread in an even layer on top of bread.

  4. Whisk the eggs, salt, pepper, milk, and cheese together. Evenly pour over sausage/vegetable mixture. Add another sprinkle of salt and pepper on top.

  5. Cover casserole with plastic wrap or aluminum foil and refrigerate for at least 30 minutes and up to 24 hours. (When ready to bake, allow to sit at room temperature for 10-15 minutes as oven preheats.)

As with most make-ahead breakfast casseroles, my version is just a guide, and you can add and top these with whatever you want!


*Swap out the cheese: Try pepper jack or gouda

*Mix up the protein: Instead of breakfast sausage, go for bacon or diced ham

*Add more vegetables: Feel free to replace all or some of the bell peppers, mushrooms, and spinach with other vegetables such as chopped broccoli, sliced zucchini or squash, or kale. Pre-cook as directed

*Bring the heat: Add some chopped jalapenos for some spice

*Try hash browns: Can use potatoes Obrien, or fry us some shredded hash browns

*Ready for your favorite toppings: Salsa (home-made or store bought), pico de gallo, hot sauce, cilantro, parsley, avocado


Add a side of fresh fruit: Strawberries, Blackberries, Bananas, Oranges
